Almost all of our shellfish is sourced from sustainable sources within Cornish waters, except for a few obvious exceptions. Where necessary, live shellfish is delivered to us daily having gone through a tightly controlled “depuration” or purification process. We are able to provide full traceability of our shellfish if requested.
Our team of specialist skilled staff hand pick freshly cooked Crabs daily. Fresh Crab meat is available as pasteurised (long shelf life), natural, or presented dressed in its shell.
